Pete Licata - V60 Ambassador Q&A and V60 Recipe!

Here at HARIO we have been very fortunate to be able to work with some of the best baristas and coffee experts in the world.
For our 100th anniversary, we interviewed several of our V60 Ambassadors, and got great, new insights into the world of coffee, as well as some amazing V60 recipes!

In this article, we talk to Pete Licata, the 2013 World Brewers Cup Champion and co-creator of the W60 Dripper and V60 Drip-Assist.

HOW LONG HAVE YOU WORKED IN THE COFFEE INDUSTRY?
18 years. I began my first barista job in January 2003.

WHAT WAS YOUR FIRST V60 ENCOUNTER?
The first V60 I had was around 2007-2008, when single cup brewing started becoming more popular in the US.

WHY DO YOU LOVE THE V60?
I love the clarity of flavour and the tendency toward vibrant tasting notes. The V60 filter makes for easy usage, and HARIO has been very supportive in the specialty coffee industry.

PETE LICATA V60 RECIPE

V60: Ceramic
Dose:
  18g coffee (“Medium-fine” grind, equivalent to 7.5 on standard EK dial)
  300mL brew water (94°C / 201.2°F @ 125TDS)
Time: 2:30

The coffee I use is a Colombia La Palma y El Tucan Natural Gesha, light roasted.

Instructions:

  1. Thirty second bloom with 50mL of water.
  2. Continuous pour with fast, aggressive water pour initially, followed by slow centre pour.
  3. Fast, turbulent pouring for final 50mL.
