For our 100th anniversary, we interviewed several of our V60 Ambassadors, and got great, new insights into the world of coffee, as well as some amazing V60 recipes!
In this article, we talk to Ibrahim H. Al Mallouhi. This award-winning barista and V60 Ambassador is based in the UAE, where he founded The Espresso Lab.
HOW LONG HAVE YOU WORKED IN THE COFFEE INDUSTRY?
Coffee has been a part of me since childhood. I used to spend time next to my grandma while she roasted Arabic coffee. She always used green coffee beans and taught me roasting techniques. She taught me how to listen to the cracking sounds, look for the right roast colour, and the traditional methods for cooling the coffee beans and grinding them in the correct way. I began exploring the business side of specialty coffee from 2004 onward.
WHAT WAS YOUR FIRST V60 ENCOUNTER?
In 2010 I was in New York, and I came across a tiny specialty coffee shop that was really crowded with a long queue out the door. I had to try it. It was there that I first saw the V60 in action. Although I ordered a milk-based cup, it became my first introduction to specialty coffee and drove me to use finer brewing manual methods such as the V60 on a daily basis.
WHY DO YOU LOVE THE V60?
I find it very elegant and graceful. It is a fine brewing method that allows me to explore specialty coffee flavours with depth and precision.
CAN YOU TELL US WHAT YOU’RE CURRENTLY WORKING ON?
We are very excited about EXPO 2020 that is coming up in Dubai on October 1st, 2021. We were recently awarded a location for The Espresso Lab and my team and I are very busy preparing for this major world event.

Dosage:
20g coffee (Medium grind size)
300mL water
Time: 2:10
Instructions:
- Pre-wet the filter and discard the water.
- Add the ground coffee.
- Start the timer.
- Slowly pour 40mL of hot water in circular motions.
- Let it ‘bloom’ for 35 seconds.
- Slowly pour the remaining water in small circular motions.
- The target brew time is 2:10.
