Matcha Recipe from ITO EN

 
Cinnamon Matcha Latte
 

Ingredients
  • 1 cup hot plant-based milk
  • 2 teaspoons matcha
  • 1 cinnamon stick
  • Ground cinnamon

Preparation

  1. In a cup, pour boiling water over the matcha powder and whisk well.
  2. Add the hot plant-based milk.
  3. Sprinkle with cinnamon

Matcha Scones
 

Ingredients
  • 200g flour
  • 1 tablespoon matcha
  • 2 teaspoons baking powder
  • 3 tablespoons sugar
  • 50g unsalted butter
  • 90ml milk


Preparation

  1. Mix the flour, matcha, baking powder, and sugar in a bowl and refrigerate for 30 minutes.
  2. Cut the butter into pieces and add to the dry ingredients. Rub together with your hands.
  3. Add the milk and mix lightly with a fork, then knead by hand to form a disk about 1.5 cm thick
  4. Wrap in plastic film and refrigerate for 1 hour.
  5. Place the dough on a baking sheet, cut into 8 pieces, brush the tops with milk, and bake in a preheated oven at 200°C for 15–20 minutes.

While Oi Ocha Ceremonial Matcha is best enjoyed as traditional matcha or a matcha latte, we recommend using a different ITO EN matcha powder for the following matcha sweets.

Matcha Cookies 

Ingredients

  • 180g flour
  • 1 tablespoon matcha powder
  • 1 tablespoon powdered milk
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • A pinch of salt
  • 115g butter
  • 150g sugar
  • 1 egg
  • A few drops of vanilla extract
  • 100g white chocolate chips


Preparation

  1. Mix the flour, matcha powder, powdered milk, baking soda, baking powder, and salt in a bowl and set aside.
  2. Using an electric mixer, cream the butter and sugar.
  3. Add the egg and vanilla extract and mix again.
  4. Combine this mixture with the dry ingredients and white chocolate chips. Mix well.
  5. Form dough balls on a baking sheet, spacing them 10 cm apart.
  6. Bake in a preheated oven at 180°C for 12 minutes. The centers should remain soft.
