Matcha Recipe from ITO EN

Ingredients
- 1 cup hot plant-based milk
- 2 teaspoons matcha
- 1 cinnamon stick
Ground cinnamon
Preparation
- In a cup, pour boiling water over the matcha powder and whisk well.
- Add the hot plant-based milk.
- Sprinkle with cinnamon

Ingredients
- 200g flour
- 1 tablespoon matcha
- 2 teaspoons baking powder
- 3 tablespoons sugar
- 50g unsalted butter
- 90ml milk
Preparation
- Mix the flour, matcha, baking powder, and sugar in a bowl and refrigerate for 30 minutes.
- Cut the butter into pieces and add to the dry ingredients. Rub together with your hands.
- Add the milk and mix lightly with a fork, then knead by hand to form a disk about 1.5 cm thick
- Wrap in plastic film and refrigerate for 1 hour.
- Place the dough on a baking sheet, cut into 8 pieces, brush the tops with milk, and bake in a preheated oven at 200°C for 15–20 minutes.

While Oi Ocha Ceremonial Matcha is best enjoyed as traditional matcha or a matcha latte, we recommend using a different ITO EN matcha powder for the following matcha sweets.

Ingredients
- 180g flour
- 1 tablespoon matcha powder
- 1 tablespoon powdered milk
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- A pinch of salt
- 115g butter
- 150g sugar
- 1 egg
- A few drops of vanilla extract
- 100g white chocolate chips
Preparation
- Mix the flour, matcha powder, powdered milk, baking soda, baking powder, and salt in a bowl and set aside.
- Using an electric mixer, cream the butter and sugar.
- Add the egg and vanilla extract and mix again.
- Combine this mixture with the dry ingredients and white chocolate chips. Mix well.
- Form dough balls on a baking sheet, spacing them 10 cm apart.

Bake in a preheated oven at 180°C for 12 minutes. The centers should remain soft.
